My Philosophy

These are my personal career philosophies I believe in; they are my career bible:

  • Fight for food integrity

  • Fresh is always better

  • Great cooking is a business of relationships

  • Professionalism equals Respect

  • Diversity and inclusion always win

  • Nutrition is particularly important

  • Food safety is a moral obligation

  • Chefs needs to be leaders, not dictators

  • Must understand flavor, and what wholesome meal means

  • Real cooks share and teach

  • Cooking is an intellectual profession and property

  • Food can and should be an experience

  • And finally, feed the homeless. Seeing such a global waste of food and inequality, breaks my heart.

Homeless Restaurant Week

Homeless Restaurant Week is one of my successful personal projects. I started 5 years ago feeding Baltimore's homeless after a touchy personal encounter with a homeless man. Giving back to the community was the right thing to do and it is always rewarding for the soul. Tue--Thursday  5 pm-  8:45 pm
Friday-Sat Kitchen closes at 9:00 PM

Eat at a local restaurant tonight. Get the cream sauce. Have a cold pint at 4 o’clock in a mostly empty bar. Go somewhere you’ve never been. Listen to someone you think may have nothing in common with you. Order the steak rare. Eat an oyster. Have a negroni. Have two. Be open to a world where you may not understand or agree with the person next to you but have a drink with them anyways. Eat slowly. Tip your server. Check in on your friends. Check in on yourself. Enjoy the ride.
